Tim Dacey, one of this city's most talented young chefs
, is no longer with Capa Steakhouse
at the Four Seasons Resort.
The Florida native and FSU grad amassed an impressive résumé with stints at the Reynard restaurant in Brooklyn, and the Setai and NoMad, both in Manhattan.
He also served two years as the chef de partie at Chicago tapas restaurant Mercat a la Planxa, working directly with acclaimed Latin chef Jose Garces, and served as chef de partie at Tony Mantuano's Michelin-starred Spiaggia restaurant in Chicago.
Dacey started out with Four Seasons Resort Orlando executive chef Fabrizio Schenardi at Pelagia Trattoria in Tampa. Schenardi, along with executive sous chef Sam Faggetti, will man Capa's kitchen, while food and beverage director Stephen Wancha actively recruits another top chef.
No word yet on where Dacey is going, but we'll let you know as soon as we find out. In the meantime, we wish him the best.
